Hi, I'm Val. I'm a Registered Dietitian, Certified Intuitive Eating Counselor, and the founder of Nourished Nutrition Therapy. I've spent my career helping people untangle their relationship with food, which, as it turns out, is rarely just about food. Before becoming a dietitian, I studied psychology and spent several years in professional development, which is a polite way of saying I took the scenic route to my calling. I eventually got my Master's in Clinical Nutrition from NYU and worked at Monte Nido, one of the country's leading eating disorder treatment centers. I now run a mostly virtual private practice but also see Duke students out of my Durham office on Fridays. My approach is weight-inclusive, which means I'm not here to shrink you. I'm here to help you build a relationship with food that doesn't require a calculator, a side of guilt, or a TikTok full of "clean eating" tips. I practice from a Health At Every Size framework and use Intuitive Eating as a foundation, meeting each client where they are without a rigid agenda for what their body should look like at the finish line. What makes my practice different? I take the work seriously without taking myself too seriously. I'm direct, I ask hard questions, and I won't tell you that kale is life-changing.
